This crumble has been a family favorite ever since I first served it at a summer picnic; the balance of sweet peaches and spicy ginger is simply delightful.
Ingredients
- Fruit Filling: 900 g (6 cups) ripe peaches peeled pitted and sliced (fresh or canned drained), 80 g (⅓ cup) granulated sugar, 2 tbsp cornstarch, 1 tbsp freshly grated ginger, 1 tbsp lemon juice, ½ tsp vanilla extract
- Crumble Topping: 140 g (1 cup) all-purpose flour, 100 g (½ cup) light brown sugar packed, ½ tsp ground ginger, ¼ tsp ground cinnamon, ¼ tsp salt, 115 g (½ cup) unsalted butter cold and cubed
Instructions
- Preheat Oven:
- Preheat the oven to 180°C (350°F). Lightly grease a 23 cm (9-inch) baking dish.
- Prepare Filling:
- In a large bowl combine peaches granulated sugar cornstarch grated ginger lemon juice and vanilla extract. Toss until the peaches are evenly coated. Spread the fruit mixture evenly in the prepared baking dish.
- Make Topping:
- In another bowl whisk together flour brown sugar ground ginger cinnamon and salt. Add the cold butter cubes. Using a pastry cutter or your fingertips work the butter into the dry mixture until it resembles soft coarse crumbs.
- Assemble:
- Sprinkle the crumble topping evenly over the peach filling.
- Bake:
- Bake for 35 minutes or until the topping is golden and the filling is bubbling around the edges.
- Cool and Serve:
- Remove from the oven and let cool for 10–15 minutes before serving. Serve warm optionally with vanilla ice cream or whipped cream.
