# Expert Suggestions:

01 -
  • The Green Goddess spread is so good you'll find yourself eating it straight from the container with a spoon (not that I've done that).
  • It's ready in 20 minutes but tastes like you spent way more time on it.
  • Fresh herbs make everything taste lighter and brighter, even though it's completely satisfying.
02 -
  • Make your Green Goddess spread first and let it sit for 10 minutes—the flavors meld and everything tastes better, not just fresher.
  • Slice your vegetables right before assembly, especially the avocado, because nobody wants brown avocado in their sandwich.
  • Use the best bread you can access—this is a vegetable sandwich, so the bread has to carry its weight.
03 -
  • Make double the Green Goddess spread and use it on roasted vegetables, as a dip for raw ones, or stirred into grain bowls all week.
  • If avocado's not quite ripe, blend it anyway for the spread, but wait to slice avocado for the sandwich until you have a perfectly creamy one.
